Did someone say 'Healthy Bee Pollen Treats'?

Amazing Raw Brownie Bites with Golden Bee Pollen Recipe

This delicious mixture makes 12 bites for you and your family to enjoy (or have them all to yourself..)  

Ingredients

¼ cup almonds

¼ cup walnuts

¼ cup brazil nuts

4 large organic dates

3-4 tbsp coconut oil

4-5 tbsp raw cacao

¼ tsp Himalayan salt (or sea salt)

Desired amount of Manuka South Bee pollen Granules

Instructions

Roughly chop the nuts in a food processor. Add all of the other ingredients, except the bee pollen. Taste the dough to make sure you do not want to add anything to your preference. When you are content with the flavor, make small brownie balls using your hands, and roll them in raw cacao powder or bee pollen. If you prefer the texture to be soft you can enjoy the bites immediately. However, you might want them to give a little chewing resistance. If so, you can leave the balls in the fridge for 15-20 minutes before eating.

The brownie bites can be kept in the fridge for about 5 days. But be aware, they are highly addictive, and you might end up eating them all long before their expiration date. Consider yourself warned…

Superfood Chocolate Bark 

This superfood chocolate bark is just a little more interesting since there are some healthy ingredients to add that extra crunch! 

You can also vary the toppings depending on what you have – different nuts and seeds, dried cranberries or cherries, freeze dried fruit pieces and cacao nibs would all work well.

Ingredients

  • 200 g (7oz) dark chocolate chopped
  • 100 g (3.5oz) white chocolate chopped
  • 1 tsp matcha powder
  • 1 1/2 tsp freeze dried blackcurrant powder 
  • handful dried goji berries
  • handful whole raw almonds
  • handful pumpkin seeds
  • 1 tsp bee pollen
  • 1 tsp chia seeds

Instructions

  1. Line a baking sheet with baking parchment. Melt the dark chocolate, either in a bowl over a pan of gently simmering water, or in short bursts in the microwave; don't let the chocolate get too hot.

  2. Melt the white chocolate in the same way then pour half of it into a separate bowl. Stir the matcha powder into one half and the blackcurranty powder into the other. If the chocolate becomes too thick, give it a couple of seconds in the microwave to re-melt it.

  3. Pour the dark chocolate onto the prepared baking sheet and use the back of a spoon to spread it out into a rough rectangle. Drizzle both white chocolates over the top, reserving a little bit of each.

Scatter over the goji berries, almonds, pumpkin seeds, bee pollen and chia seeds then drizzle over the remaining white chocolate. Set aside for a couple of hours at room temperature, or 20 minutes in the fridge until the chocolate has set then use a sharp knife to chop the slab into rough pieces. Store in an airtight container.

Almond Butter Bee Pollen Banana Snack

Anything that contains banana's makes my mouth melt, I love banana's! So when I came across this simple treat, I knew I had to share with you! 

Ingredients:

Instructions:

  1. Slice 1 banana on a plate and put aside.
  2. In a small bowl combine almond butter and melted coconut oil until creamy.
  3. Drizzle* almond butter mixture over the sliced banana and then sprinkle bee pollen over top.
  4. Gobble it up with a fork and bee happy!

*If you would like to get fancy with your drizzling abilities pour the almond butter mixture into a small plastic baggie and snip a small bit off the bottom corner, this will give you a nice drizzle effect.

BlueBerry Honey & Bee Pollen Popsicle

I scream, you scream, we all scream for icecream! 

  • 1 banana
  • 1 cup fresh blueberries
  • 1 cup almond milk
  • 1 tablespoon coconut oil
  • 1 tablespoon Manuka Honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon bee pollen granules
  • 1/2 teaspoon freshly ground bee pollen granules (optional)
  1. Blend all ingredients except for the whole bee pollen granules. (You can add the optional ground bee pollen for an extra pollen punch)
  2. Once smooth, pour into your Popsicle trays and throw into the freezer.
  3. Once frozen, usually about 2 hours, remove from the tray and roll in whole bee pollen granules.

Bee Pollen Sprinkled Popcorn

Now this is one for the kid's, who doesn't love popcorn right? 

  1. In a medium bowl, pour your melted coconut oil over your air-popped popcorn, covering all the kernels.
  2. Sprinkle the ground bee pollen over top and mix to coat.
